By now most of the bloggers have seen these before or even made them, but I had made these for my brother's dental office open house and have had many requests for the recipe from family and friends since that day, and since I would like my favorite recipes to be on my blog, I decided to post them. I originally saw them on Bakerella's website, famous for her awesome cake balls. I then also saw them over at cookies and cups. If you have not been to cookies and cups, definitely check it out. She has some of the most amazingly creative and beautifully decorated treats that I have ever seen, and you have to see the cute things she has done with these truffles.
So I thought with the recipe I would tell you the story of how I came to join a gym. Why I would feel the need to tell you the story of when I joined a gym as I am doing a candy post, well I could not tell you. I think sometimes I should have called my blog The Bipolar Cook. I guess that is just the way my mind works, one extreme to the other. But actually, I think it is because this time of year I tend to get a little more health conscious and try to eat better (though you wouldn't know it from my posts), and at the same time, I feel we should not deny ourselves the good things in life. Anyway, about six years ago, I was starting to feel fairly lousy. I was always tired, no energy, no motivation, aches and pains, etc. I went to my doctor and told her how I felt. She just looked at me and said, "you have two small children; there is your reason that you feel run down." She told me what doctor's always say and rightly so to get more exercise and eat better. I decided she was right that I needed to get more exercise. I had always walked with my kids in their strollers, but I needed someone to push me; I needed to join a gym and take classes. So the next day I affirmed to myself that I would join a gym. But I was nervous. I did not know if I could get up the courage to do it, but I really felt I had to try. Here is how it went.
Day one: I drive to the gym. I drive by the gym quickly; I go home.
Day two: I drive to the gym. I drive slowly by the gym; I go home.
Day three: I drive to the gym. I pull into the parking lot; I pull out of the parking lot and go home.
Day four: I drive to the gym. I pull into a parking spot. I shut off my car. I quickly turn the car back on. Then I stop myself. This cannot continue. I must go in. I get out of the car walk extremely slowly across the parking lot. I walk through the doors. There at the front desk is an extremely well-muscled, slightly overly-fake-tanned man in a tank top and tiny shorts. He looks at me. I stare at him like a deer in the headlights. I can hear him in the background saying, "can I help you?" I think to my self , "I will just tell him I thought this was Costco." "No, he will never believe it. Costco is on the other side of the highway." Again, I hear him, "can I help you?" "I..I..(gulp).. would like to join your gym?" He then proceeds to show me around the gym, stopping at various ominous looking machines that I know I will never get on while I follow him around like a puppy dog giggling like a school girl at anything he says that is even remotely funny. And then I joined the gym. I got in my car. I was so proud of myself. Tomorrow I would come back and exercise. Here is how my days at the gym went.
Day one: I get in my car. I am so happy. Today is the beginning of the new me! I drive to gym. I drive by the gym.
JUST KIDDING! I actually have been going ever since and have never felt better. Best thing I ever did. Some days I have to drag myself and some weeks I slack off, but pretty much I have been faithfully going ever since. Now I just have to work on the eating part. Oh yeah, here is the recipe for the Oreo Truffles.
Here is what you need.
Place one package of oreo cookies in a large bowl or in a food processor. My food processor is very tiny; so I have to crush the oreos in a bowl. I use a potato masher. Cookies and Cups places the cookies in a plastic bag and crushes them with a rolling pan. Do it what ever way you feel is easiest for you. They must be finely crushed.
When the oreos are finely crushed. Remove 1/2 cup of the mixture and set aside. You will use this later to decorate the tops. Add one 8 ounce package of softened cream. Mix using the back of a large wooden spoon to incorporate the cream cheese with the oreos. This will take a little bit of time. Use the back of the spoon to mash the cream cheese against the side of the bowl, turning the bowl as you incorporate the oreos. Mix together well.
I know not a pretty picture, but to be honest with you, it taste so good at this stage that I could just pull out a spoon and eat it just like that.
Once it is thoroughly mixed together, roll the mixture into one inch balls and place on a wax-paper-lined cookie sheet and place in the freezer for 15-20 minutes.
Meanwhile melt white chocolate according to package instructions. I do it in the microwave. Then drop the balls one at a time into the melted chocolate. Spoon the chocolate over the ball. Gently pick up the ball with a spoon and tap the spoon against the side of the bowl. This smooths out the chocolate. Gently roll the balls off the spoon onto wax paper. Sprinkle with some of the reserved crushed oreos. If a lot of chocolate pools around the bottom of the balls, use a toothpick to score circles around the bottoms. This will make it easy for you to break off the excess chocolate after it has hardened. Allow to harden and serve or refrigerate until ready to serve. Most of the craft stores sell bon bon cups which look like mini cupcake liners which make a very nice presentation if you place the truffles in them.
Oreo Truffles
1 Package of Oreo cookies
1 8 ounce package of cream cheese, softened
2 14 ounce package of white chocolate melting discs
Finely crush the oreo cookies by either putting in a food processor, placing in a large bowl and crushing with a potato masher, or placing in a large plastic, zip-top bag and crushing with a rolling pin. They must be finely crushed. A few larger pieces here and there is okay, though. Reserve 1/2 cup of the finely crushed cookies to be sprinkled on top later. Place crushed cookies in a large bowl. Add cream cheese. Use the back of a wooden spoon to mix together and incorporate the cookies and the cream cheese until they are well mixed. Roll into one inch balls. Place on wax-paper-lined cookie sheets and place in the freezer for 15-20 minutes. Meanwhile, melt white chocolate according to package instructions. Drop balls into the chocolate one at a time. Use a spoon to cover with chocolate. Lift out of the chocolate with a spoon. Tap the spoon on the side of the bowl a few times to smooth out the chocolate and allow excess to drip down. Let the ball roll of f the spoon onto wax paper. Sprinkle some of the reserved finely crushed cookies on top of the truffles. Allow to harden and serve or refrigerate until ready to serve.
